Carolina BBQ Dinner

t's a long way to North Carolina, but you can experience a genuine Carolina BBQ using these recipes.

Classic Pulled Pork Sandwich, Carolina Cole Slaw, Sweet Corn Fritters

8 pounds boneless pork shoulder
¼ cup BBQ Spice Rub (recipe below)
3 cups Smoky BBQ Sauce (recipe below)

Rub the pork generously with BBQ spice rub. Wrap tight in plastic and refrigerate overnight. Preheat oven to 275 degree F. Remove pork from refrigerator and place in shallow roasting pan inside the oven. Bake for 4 hours, turning over once or twice. Remove roast from oven. Wrap in foil and return to oven for another 3 hours. Remove from the oven and let cool in foil for 1 hour. Remove from foil. Shred pork by hand and place into bowl. Cover with Smoky BBQ Sauce. Toss and serve. May put back in oven to keep warm.

1 cup paprika
1/4 cup dark brown sugar
2 Tbsps. granulated garlic
1/4 cup celery salt
½ Tbsp. white pepper
1/2 Tbsp. mustard powder
2 tsps. ground thyme
1 tsp. cayenne pepper

Sift all ingredients into bowl. Mix well and reserve.

Smoky BBQ Sauce
1 cup ketchup
1 cup apple cider vinegar
3 Tbsps. brown sugar
1/2 cup chipotle ketchup
2 Tbsps. yellow mustard
1/4 tsp. salt

Mix all ingredients together. Does not need to be cooked.

Cole Slaw Dressing
1 cup cider vinegar
1 1/2 cups vinegar
6 Tbsps. dry yellow mustard powder
1 1/2 cups sugar
2 tsps. ground white pepper
2 Tbsps. celery salt

Place all ingredients into stainless steel saucepan. Bring to a boil mixing well. Turn off fire and let cool.

Cole Slaw Mix
8 ounces green pepper, julienne
3 heads white cabbage, sliced thin
8 ounces red onion, thin slice
8 ounces red pepper, julienne
2½ cups cole slaw dressing
12 ounces carrots, julienne
2 tsps. celery salt
1 cup peanut oil

Toss all ingredients together. Let stand one hour and serve.

Sweet Corn Fritters
½ cup white corn meal
2 cups yellow corn meal
2 eggs
2 cups flour
1 tsp. salt
3 cups buttermilk
1 tsp. baking powder
1 tsp. ground white pepper
1 tsp. granulated garlic
1 tsp. baking soda
2 Tbsps. sugar
1/2 tsp. onion powder
2 cups fresh corn kernels, lightly blanched
2 ounces jalapenos, minced
1/4 cup butter, melted

Place all ingredients into mixing bowl and mix well. Heat oil in deep fryer to 360 degrees F. Scoop out small round portions of fritter batter and drop in oil. Cook in oil until cooked through and golden brown on the outside
